We’re looking for a skilled Gelato Maker with at least 5 years of hands-on experience to lead daily gelato production and help us maintain consistently high quality across flavors, texture, and presentation.

Key Responsibilities

Produce high-quality gelato and sorbet daily (mixing, pasteurizing, ageing, churning, and storage)

Develop and improve recipes, seasonal flavors, and specials (including dairy-free and low-sugar options when needed)

Manage production planning: batch sizes, par levels, forecasting, and minimizing waste

Maintain strict hygiene and food safety standards (HACCP-style practices preferred)

Monitor ingredient quality, storage temperatures, and shelf-life control

Ensure consistent texture, overrun control, and flavor balance across batches

Maintain and troubleshoot gelato equipment (pasteurizer, batch freezer, blast freezer, display)

Train and supervise junior staff if required

Coordinate with management on ordering, inventory, and cost control

Requirements

Minimum 5 years experience as a Gelato Maker / Gelatiere (artisanal gelato experience preferred)

Strong knowledge of gelato science: fat/sugar balance, stabilizers, emulsifiers, acidity, and texture control

Confident with professional gelato machinery and basic maintenance

Excellent cleanliness, organization, and attention to detail

Ability to work early shifts, weekends, and during peak seasons

Team player with a quality-first mindset
