Key Duties and Responsibilities :
Menu Development & Preparation: Design authentic Lebanese and Levantine menus, which include hot and cold mezze (e.g., hummus, tabbouleh), shawarma, kebabs, manakish, and traditional desserts.
Recipe Standardization: Create and standardize recipes to ensure consistent flavor, texture, and portion control across all meals.
Quality & Authenticity Control: Conduct daily tasting sessions and quality checks to ensure dishes maintain their traditional heritage while allowing for modern culinary innovation.
Staff Leadership & Training: Manage, mentor, and schedule kitchen staff. Conduct regular training on Lebanese culinary techniques, safety protocols, and presentation standards.
Inventory & Cost Management: Monitor ingredient levels, manage stock control to minimize wastage, and collaborate with suppliers to source high-quality ingredients. Oversee culinary budgets and food costs.
Health & Safety Compliance: Ensure full compliance with all health, safety, and sanitation regulations, including proper food handling. Maintain a clean and organized work environment.
