The kitchen felt sharper when Avakaya was being made, filled with the smell of raw mango and spice. Mangoes were washed, dried, and cut, while mustard was ground and spices came together slowly. Everything was mixed with oil and kept aside, waiting to become what it was meant to be. When it finally reached the plate, it was bold and fiery, waking up even the simplest meal.
